Vegan Caesar Salad

Ingredients:


For the dressing:

  • 1/4 cup (62g) natural soy yoghurt

  • juice of 1/2 lemon

  • 1 tsp. honey

  • 1 garlic clove, crushed

  • 1 tsp. mustard

For the salad:

  • 1 romaine lettuce, chopped

  • 1 avocado, chopped

  • 2 slices brown bread, toasted and chopped

  • 1 pomegranate, seeds to serve

Method:

  1. Firstly, toast your bread

  2. In the meantime, make the dressing, place all the dressing ingredients in cup/bowl season to taste, and mix well until smooth, then set aside

  3. Next, assemble the salad in bowls (lettuce, avocado, bread) and garnish with the pomegranate seeds

  4. Top with 2 tbsp of the dressing and serve
