Potato Salad

Ingredients:

  • 16 oz. (450g) baby potatoes

  • zest and juice of 1 lemon

  • 2 tbsp. parsley, chopped

  • 2 tbsp. mint, chopped

  • 2 tbsp. chives, chopped

  • 4 tbsp. natural yoghurt

Method:

  1. Cook the baby potatoes according to instructions on the packaging

  2. Once cooked set aside to cool

  3. Once cooled, cut the potatoes in half and add in the rest of the ingredients, then mix well

  4. Season with salt and pepper to taste. Serve as a side
